Culinary entrepreneur Dan Seelen, the founder and managing director of Superfoods sarl, has set up a new pop-up healthy lunch takeaway service at the Pyg Irish Bar in Luxembourg-Clausen.

Freshly opened on Monday, the pop-up restaurant builds on the already successful Superfoods.lu healthy food delivery service, set up in 2016, and is aimed at employees in Clausen looking for a quick, healthy lunchtime option. For the moment, the venture is limited to lunchtimes, between 11:45 and 14:00, although Dan suggested the possibility of extending the service to evenings in the future. He compared the restaurant service to the British sandwich shop chain "Pret a manger" but with a strong focus on nutrients and labelling various allergens.

Indeed, Dan Seelen, who formerly worked in a bank, set up Superfoods.lu to fill a gap in the market for fresh, nutrient-rich food that also caters to consumers with intolerances and allergies. For the new pop-up restaurant, Dan freshly prepares all sandwiches and salads every morning, facilitating the lives of office workers and/or fitness fanatics looking for a quick but nutritious lunch option. Whilst most of the dishes are meat- or fish-based, various vegetarian options are set for a spot on the menu as early as next week. Returning to the focus on allergens, Dan emphasised the importance he places on using separate pans and cutlery when cooking different dishes to minimise risks to allergy or intolerance sufferers, like himself.

Concerning pricing, most dishes cost around €10.80, based on the "chèques repas" system to offer fair prices. Whilst profit is important for a small business, Dan was adamant that Superfoods.lu (both the delivery service and now the pop-up restaurant) was mainly born from his passion for cooking healthy meals that people enjoy eating. He added that one of his main aims is to "make everyday food healthier", whilst also bringing in dishes from other countries that may have been missing previously in Luxembourg.

As the seasons change, so too may the menu according to Dan. He mentioned the possibility of adding healthy versions of some winter classics, such as turkey chili. 

The Superfoods pop-up restaurant is now open Monday to Friday between 11:45 and 14:00 at the Pyg Irish Bar in Luxembourg-Clausen. Indeed, the choice to team up with the Pyg seemed perfect to Dan Seelen, who said "they had the location and I had the kitchen".
