Economic interest group GIE Luxembourg @ Expo 2020 Dubai and the Luxembourg Hotel and Tourism School (EHTL) have announced the selection of four young local chefs to implement the gastronomic component of the Luxembourg Pavilion at the Expo 2020 in Dubai.
In October 2019, GIE Luxembourg @ Expo 2020 Dubai identified Kim Kevin de Dood as the Luxembourgish chef chosen to manage the catering component in the Luxembourg Pavilion during the World Expo in Dubai. The dishes served at the pavilion will therefore be prepared by Kim Kevin de Dood and his team, which includes students from the EHTL.
In order to contribute to the promotion of young talents in Luxembourgish gastronomy, a working group, composed of representatives of GIE, Horesca, Vatel Club, Lycée technique de Bonnevoie, the Institut viti-vinicole and the EHTL, has just appointed four young chefs who will develop recipes for the restaurant "Schengen Lounge" during the six-month exhibition (October 2019 to April 2020).
Following a call for applications launched in 2019, the chosen chefs are: Archibald De Prince, a 28-year-old cook and sous-chef at "La Distillerie" at Bourglinster Castle;
Clovis Degrave, a 30-year-old cook and chef at Hostellerie du Grünewald in Luxembourg-Eich; Caroline Esch, a 24-year-old cook and chef at Pavillon "Eden Rose" in Kayl:
Aurélien Fontaine, a 22-year-old cook, station chef at "Traiteur Niessen" in Troisvierges.
Each of these chefs will prepare dishes, together with Kim Kevin de Dood and EHTL students. The proposed recipes will all highlight the culinary art of the Grand Duchy, as well as representing modern and inventive cuisine, combining traditional Luxembourgish cuisine with different international influences. All the dishes will reflect Luxembourg and its cultural diversity.
On the occasion of Luxembourg Day (23 January 2021), the four chefs will travel to Dubai to assist with the creation of the menus on site. The proposed menus will also be found on the respective menu of the restaurants of the chosen chefs.
Expo 2020 Dubai will run from 20 October 2020 until 10 April 2021.
