Aline Bourscheid and Clovis Degrave, the entrepreneurs behind the Hostellerie du Grünewald and the Grünewald Chef's Table in Luxembourg-Dommeldange, are about to launch their most recent project, Maison B in Bridel (31 Rue Biergerkraiz).

The former Boos Beach Club, which closed twelve months ago, has been taken over, with the couple investing around €700,000 to renovate it, including undertaking a complete refurbishment, replacing all the furniture and furnishings, and upgrading the kitchen facilities too.

Talking with Chronicle.lu, Aline Bourscheid explained that they signed a lease in June this year and have been working hard to prepare it for its new lease of life. She confirmed that it will open initially just in the evenings, with Sunday seeing it open from lunchtime. It will be open Wednesdays to Sundays each week and then, after around six months, it is planned to open it seven days a week, from 12:00 - 01:00 (except Saturday lunchtimes). The kitchen will open all day long, with a bar menu available from 14:00.

The restaurant is a "chic modern brasserie with some traditional dishes and some contemporary dishes", Aline Bourscheid explained, adding "a brasserie should be for everyone" as the menu includes many seafood and vegetarian dishes, as well as meat dishes.

It can cater for up to 160 covers, with separate dining areas in the front and back, with additional area outside on the terrace for when the weather warms up again next spring/summer.

On Friday and Saturday evenings, a DJ will play music, with live music planned for the summer months; and the venue will also be available for private events too, where up to 180 people can be catered with a walking dinner.

In addition to the 50 staff working in Dommeldange, 23 staff will be engaged at Maison B in Bridel, which also will have a playground in a Kids' Corner as well as a pétanque court. At Christmas, they hope to have a market on the terrace outside, with some chalets already lying in wait to be decorated and used.

On managing the three facilities in the two separate locations, she recalled: "I remember this place from when I lived in Steinsel; from Dommeldange, it is not very far - it only takes seven minutes to come from the Hostellerie du Grünewald. Hopefully I will have more time". She emphasised "we have a very stable team" which certainly helps.
