The Stëmm vun der Strooss non-profit organisation that supports the homeless and vulnerable members of society has announced that, for several months now, the beneficiaries of its three social restaurants have been receiving fresh sushi boxes several times a week in addition to the daily menu, which they can eat on site or take away.
The organisation, which is open to partners who, like itself, are fighting against food waste, has a partnership with ASA GROUP, a food and beverage distribution company. One of the group's brands is Sushi Fresh, a brand that produces ready-to-eat sushi dishes for retailers. The products are sold in a large number of supermarkets and petrol stations in Luxembourg and Belgium.
Three times a week, the Sushi Fresh team takes care of delivering all unsold food that has not yet passed its best-before date to the Stëmm Caddy service in Sanem. From here, the Stëmm drivers quickly deliver to the social restaurants to bring joy to the beneficiaries.
Both Sushi Fresh and the Caddy service strictly adhere to the HACCP standards and ensure that the products are constantly in a cold zone from the time they are collected from the supermarkets until they are delivered to the social restaurants. Daily checks, labelling, temperature measurement and transport in refrigerated vehicles guarantee unique compliance with the cold chain and therefore food safety for the recipients.
Given the increasing number of visitors in the social restaurants, the Stëmm - especially their chefs - often have to improvise during service to guarantee a meal for each recipient. Being able to serve such a large quantity of sushi or poke bowls (circa 230 sushi platters, 130 bowls and 140 wraps) is a real relief and naturally makes the chefs' work easier when planning the weekly menu.
Sushi Fresh produces all its products in its own workshops: from cutting salmon, cooking rice, cutting vegetables, making sushi and packing it in boxes.
